When sustainable seafood takes up more space on our plates, it's good for both our health and our environment. West Sweden has a long tradition of harnessing resources from the sea and lake, and today that tradition is being met by a new wave of innovation. From the cultivation and breeding of different species, to the production of new seafood products.
Species such as mussels, oysters, seaweed and sea scallops generally have a low climate impact because they absorb nutrients directly from the sea and do not require additional fertilization or irrigation. On the contrary, so-called extractive species contribute to reducing eutrophication by fixing nutrients such as nitrogen and phosphorus.
Mussels, oysters, seaweed and sole can also be delicious! They add umami, saltiness, texture and a lovely touch of the sea to your cooking. That's why, together with some of the West Coast seafood companies, we've put together these recipes to inspire you to cook with the new blue everyday food. Let yourself be inspired!
This collection of recipes is one of the results of the collaboration built up in West Sweden. We are joining forces to build a sustainable blue bioeconomy, that is, an economy based on renewable resources from the sea and lake. We would like to thank the innovative entrepreneurs and companies that are at the forefront of the development of the new seafood. In this context, a special thank you to the Swedish Aquaculture and Seafood Association who came up with the idea and the companies Scanfjord, Marine Taste, Musselbaren, Musselfeed, and Nordic Seafarm for the recipes. We would also like to thank all our partners from academia, research institutes, test and demo environments, interest organizations, public actors and financiers who contribute to the development.
